Weather has been up and down lately so a bit of heat in our bellies may not be a bad thing!


Mix together:

2 cans black beans

2 cans corn

2 fresh tomatoes, diced

Juice from 3 limes

1 teaspoon cumin

Chopped parsley and salt/pepper to taste

And if you want a little heat, 1 jalapeno pepper, diced finely!

Serve with some chips or pretzels or pita or eat it plain! Your call!
