Holiday memories often revolve around recipes.

Below are two for Passover – enjoy!

 

Passover Brownies

1/2 cup margarine

2 oz chocolate

Melt the chocolate with the margarine, Set aside to cool.

 

2 eggs

1 cup sugar

2 teaspoons salt

1 Tablespoon black coffee

1/2 cup cake meal

1/2 cup nuts

Beat eggs and add the sugar slowly then the salt, black coffee, and the cooled chocolate mixture. Add the cake meal slowly and stir in the nuts. Bake in an 8×8 square pan at 350 degrees for 30 minutes. Cool and slice.

 

 

Matzah Balls

4 eggs

1/2 cup ginger ale

1/3 cup melted chicken fat (Schmaltz)

1 teaspoon east salt and pepper

1 cup matzah meal

 

Beat the eggs and add the schmaltz and ginger ale. Blend well and fold in salt, pepper and matzah meal. Cover and refrigerate for at least 4 hours or overnight. Form in 12 matzah balls and then Cook in rapidly boiling water covered for 40-45 minutes.
