On a cold (super cold) day like today, why not make a nice hot pot of soup? Bean soup is one of the more healthful varieties!

 

Navy beans, like all beans, are a great non-meat, non-dairy source of protein. They are a good source of folate, manganese, vitamin B1, and dietary fiber!

INGREDIENTS

1 lb bag of dried navy beans
3 quarts water
1-2 large onions, chopped
4-6 stalks of celery, diced
1.5 teaspoons sugar
3 bay leaves
3 Tablespoons dried parsley
Salt to taste

DIRECTIONS

Place the beans in water and bring to a boil. Remove it from the heat and keep it covered for 1 hour (can be done the day before). Place the soaked beans in a large pot and add all the remaining ingredients. Bring to a boil then simmer for 3 hours or until the onions and celery are translucent. Add additional parsley to taste.
