Salmon is a great way to add fish and all its healthful qualities to your menu. Salmon is full of Omega-3 fatty acids, Vitamin Bs of all sorts, potassium, and it reduces the chance of heart disease. And since the salmon patties are baked not fried, it’s tasty but better for you!

INGREDIENTS

2 eggs
1 cup diced celery, parboiled
1 can salmon
1 cup bread crumbs
¼ cup mayonnaise
1 tablespoon grated onion
¼ teaspoon salt

DIRECTIONS

Preheat the oven to 450 degrees. Mix all the ingredients in a large bowl then form the mixture into 4 patties. Spray a baking sheet with cooking spray and place the patties on the tray. Bake for 10 minutes then flip the patties and bake an additional 10 minutes. If the patties need more time, continue baking until done.
