Recipe for Zucchini Cake

Zucchini is a great way to get your fiber for the day – it is tasty and adaptable so it’s easy to lower your cholesterol and get a lot of vitamin C and calcium too. And you can get your source in a fun way – dessert! The cinnamon in the recipe has its own health benefits as well!


3 eggs
1 cup oil
1 tsp vanilla
3 cups flour
1.5 tsps baking powder
1 tsp baking soda
2 cups sugar
3 TBSPs cinnamon
2 cups shredded zucchini (packed)


Mix first 3 ingredients in a large mixing bowl. Then add the flour, baking powder, baking soda, sugar, cinnamon, and zucchini. Mix with an electric mixer or by hand until well blended. Pour into 2 greased loaf pans and bake at 350 degrees for 1 hour.
