Recipe for Fruity (Soaked) Muesili
It’s no secret that muesli can be dry if not cooked long enough and too mushy if cooked too long. Try soaking your oats overnight for a healthy delicious breakfast the following morning.
Wheatgerm (optional) – about 1 tablespoon
Chia seeds (optional)
Rolled oats – about 1/2 cup
Apple juice or water – about 1/2 cup
Lemon juice – 2 teaspoons
Honey or sweetener of choice – 2 teaspoons
Apple, grated or fresh berries
Raisins or other dried fruit like dates, figs, or apricots – 1 tablespoon
Plain yogurt – about 1/4 cup
Combine wheatgerm, if using, rolled oats and apple juice or water in a bowl. Cover and refrigerate overnight.
In the morning, stir in lemon juice, sweetener, fresh fruit, dried fruit, and yogurt. Add more or less of any of these ingredients depending on your preferred consistency.
