Recipe for Chicken Marbella

The Mediterranean flavors of this recipe are classic – and the olives are a nice healthful part of that! They are a good source of polyunsaturated fatty acids which can reduce the risk of heart disease.


4 lbs of chicken pieces (boneless will cook faster)

Marinade and sauce:
½ head garlic, chopped
¼ cup red wine vinegar
¼ cup olive oil
½ cup pitted prunes
½ cup pitted green olives
½ pitted black olives
¼ cup capers with juice
¼ cup dried oregano
3 bay leaves
Salt and pepper to taste

Before baking:
½ cup brown sugar
½ cup white wine


Mix all ingredients together (except the chicken), pour over the chicken, cover and refrigerate for 2 nights. Turn the chicken every now and then so coat each piece. This can be done in large resealable plastic freezer bags. When ready to bake, place the chicken in a pan and spoon the marinade (including the solids) over the chicken. Combine the brown sugar and white wine together, pour it over the chicken and bake covered at 350 degrees for 1 hour.
