Recipe for Beet Borscht

The health benefits of beets are amazing! The phytonutrients fight cancer, the vitamin C boosts your immune system, and then you fiber, folate, manganese and others! And this recipe is easy since it starts with canned beets. You can now get fresh prepared ready to use beets at places like Costco and Trader Joe’s! Many nutritionists say we should eat a rainbow of fruits and vegetables daily. Here’s one for pink!

INGREDIENTS

4 10 oz cans whole beets or the equivalent of the fresh prepared
6 eggs
2 pints sour cream
Salt to taste

DIRECTIONS

Drain the beets and reserve the juice. Add ¾ can of water per can or about 3.5 cups of water. Grate the beets into the reserved juice and water. In another bowl, beat the eggs and add the sour cream. Mix well. Combine the beet and egg mixtures. Add sour salt to taste and refrigerate. Serve cold.
